Strawberry Tiramisu

Fab recipe... 

Not much I can say here... 

Eggs are raw.. yes.. here we do not so much have a problem.. good thing is that now you can find pasteurised eggs in the supermarket so that makes things a bit easier... 

Simple dessert to make. Just a whisk and a couple of bowls..

Same recipe as with coffee just a few differences..

Duration:45 minutes prep


500g of strawberris hulled and cut in 1.5 cm cubes 

200 g of sugar devided (50 and 150)

1 tblsp thyme honey or other aromatic but light honey

half of a preserved lemon washed, just the sin, cut in tiny pieces

3large eggs separated 

1 shot of aromatic alcohol drink

500g of mascarpone cheese or a mix of mascarpone and cream cheese

400 g ladyfinger bisquits


Put the strawberries in a bowl with 50 gr of sugar, the lemon and honey. Leave for at least an hour to macerate. Strain, keep the liquid separate.

Prep the cream.

Beat the eggwhites till we have stiff peaks.

In another bowl beat the yolks with the rest of the sugar and the shot till light and creamy. 

Add the cheeses and mix till you have a nice cream.. 

Fold in the eggs whited in 3 steps with the help of a spatula.

Empty the mix in a pastry bag and refridgerate.

Mixture is enough for a 3 layer 23 cm ckae or a 2 layer cake in a bigger container. 

Lightly soak the bisquits in the strawberry juice and layer them in a pan.. 

Divide the cream mixture followed by the strawberries.. 

Leave in the fridge for a night to mature...
