Fluffy Strawberry and Vanilla cake

During this recent period of lockdown I have been trying to clear out my kitchen cupboards, my fridge and my freezer…in order to use up whatever exists within therefore avoiding having to go to the supermarket very often…

I hope I can manage that…

Sometimes I find things that I’m not even sure what they are, other times I find things that have been out of date for ages, like yesterday, when I found a packet of French toast that was two years out of date! Anyway I ate the French toast and I’m still here the next day so that went well!!

I found some strawberries that I had put into the freezer last year and thought I’ll make something with them.. I thought it would be a good idea to make a simple fluffy cake and put them into it.

It turned out FABULOUS!! I would never have imagined it would be so good! I serve it plain but if I wanted to I could take it to another level as it would be perfect with a little whipped cream with some fresh strawberries for garnish on top.

Of course it can be made with fresh strawberries..you don’t have to have frozen berries in the freezer in other words!!

Ingredients

125g Butter at room temperature

1/2 tsp of Salt

300g Sugar and another 40g for the strawberries 

2 medium Eggs

2 tsp Vanilla essence 

160g Full Cream Milk

2 tsp Baking powder

330g All Purpose Flour

700g Strawberries cut in the middle 

Method

Preheat the oven to 170c fan forced.

Butter and Flour a baking tray 20X28 cms or thereabouts.

Put a piece of greaseproof paper in the base of the baking tray and butter and flour that.

In the mixer beat the butter with the salt and 300g of sugar until it becomes light and fluffy.

Put in the eggs and the vanilla and beat well.

Put in the milk and stir that in. The mixture could split if the milk is too cold don’t worry about that.

In a bowl mix the baking powder and the flour and then add the wet mixture to it.

Stir the mixture until well mixed and smooth.

Pour the mixture into the baking tray and smooth it out to get an even coverage. Place the strawberries in a single rows. Sprinkle the rest of the sugar over the cake mixture.

Bake for 45 mins or until it is fully cooked.

Test the cake with a knife which when inserted into the cake is clean when retrieved.

Leave the cake to cool down completely on a cake rack. 

Cut into pieces and serve alone or with some whipped cream as you wish.
