Made a kick ass cake last night.. easy, no mixer needed, just a few bowls type of cake that has a lot of fruit inside..
It is based on a recipe I got from Debs (Smitten Kitchen), and I have told you how much I love that woman and how much she has helped me over the years!
So, let's see why you should make this cake
a) tastes wonderful. The combination of apples, pears, quince etc it is wonderful and especially the quince gives it a lovely acidity that really cuts down on the sweetness of it.
b) it tastes even better the next day.. The juices from the fruit really turn the cake into some sort of custardy realness and it is just beautiful!
c) just because!
You can use apples, pears, quinces or any combination of those.. You will need about 6 fruit total...
Used 5 spices mix.. love the aniseed and the fruity Sichuan pepper and their effect on the cake it is just wonderful! And a fruity olive oil also gives a lot of character..
